GADO GADO – INDONESIAN PEANUT SAUCE SALAD
For a salad that won’t sacrifice on flavour, toss your favourite crunchy veg in this moreish sambal-peanut sauce that comes together in minutes. While all sorts of chopped vegetables will work in this salad, we’ve included a traditional and simple combination here.
Serves 2
For the peanut sauce dressing
3 tbsp Rempapa Satay Peanut Sauce
1 tbsp Rempapa Sambal Tumis (if you like it hot!)
1 tbsp of hot water
Juice from 1/4 lime
For the salad (small handful of each)
Firm tofu or tempeh
Cucumber
Boiled baby new potatoes
Lettuce
Beansprouts, blanched
To serve
2 tbsp fried shallots
1 boiled egg
Prawn crackers
Stir together the peanut sauce dressing, adding just a tiny splash of hot water to loosen if needed.
Cube and fry the tofu or tempeh until golden. Prepare vegetables of your choosing by chopping into bite sized pieces. Arrange in a bowl and drizzle the peanut sauce dressing over.
To eat, mix well and top with fried shallots, boiled egg and prawn crackers. Enjoy while fresh and crunchy!
